Blueberry Cheesecake Eggroll


Blueberry Sauce

  • 2 1/2 Cups Blueberries

  • Juice of 1/2 a lemon

  • 1 tbsp Sugar

Cheesecake Mixture

  • 2 (8 oz) blocks cream cheese

  • 1/2 cup sugar

  • 1/2 cup sour cream

  • 1 tsp pure vanilla extract

  • Pinch of salt

Other Ingredients

  • Egg roll wraps

  • Vegetable oil, for frying

  • powdered sugar, for garnish


  1. Mix blueberry sauce ingredients in a pan over medium heat until thickened. Remove from heat and cool.

  2. Using a hand mixer, beat together cheesecake mixture.

  3. Take egg roll wrap and lay in a diamond shape. Fill with 2 tbsps of cream cheese mixture and a big spoon full of blueberry mixture, then roll up.

  4. Fill a pan with 2 in vegetable oil and heat.

  5. Cook egg roll in oil for 1 minute each side.

  6. Garnish with powdered sugar.
